There is nothing not to love about these scrumptious little bites! Every event I've made these for they are one of the first things to go and I always get a ton of compliments on them.

Psst….Some Secrets Before You Start
Let the brie and cream cheese come to room temperature for about 15-20 minutes before starting this stuffed dates recipe because this will help them to mix easier and make sure the flavor blend perfectly.

You can make these Stuffed Dates a few days ahead. Just store them in a sealed container in the fridge and wait to top them on the day of with the toasted almonds and chives so they don't lose their crunch.
You should have about 2-3 stuffed dates per person, these dates are rich and satisfying so that amount is perfect!

Stuffed Dates

Ingredients
1 lb large medjool dates
4 oz cream cheese
6 oz brie, rind removed
3-4 strips bacon
¼ cup sliced almonds
Chives to taste
Instructions
Add the bacon to a baking sheet and bake at 400°F for 10-15 minutes depending on how thick your bacon is. Let of cool.
Cut a slit in the center of the dates. Remove the pit.
Cut the rind of the brie. Add your brie, cream cheese and bacon to a food processor. Blend until smooth.
Heat a large skillet on medium high heat. Add your sliced almonds to the dry pan in a single layer. Stir or shake often, for about 3 minutes, until golden brown and smells nutty. Using a mortar and pestle, pulverize the almonds into pretty small pieces.
Pipe the cheese inside the dates. Coat with almonds and add chives.
